Eat Well with Lisa:



I have been very very busy the last few weeks - it feels like I am always on the go!

It can be challenging to keep up with my goals when constantly on the move - and the best way I do that is by planning ahead and making sure I am able to have healthy choices ready to bring with me or already made for when I get home. Salads are great for this!


Here are some quick and protein-filled salad ideas that you can enjoy for lunch on the go:


  1. Chicken Caesar Salad: Grilled chicken strips, romaine lettuce, cherry tomatoes, croutons, and Caesar dressing.

  2. Quinoa and Chickpea Salad: Cooked quinoa, canned chickpeas, diced cucumber, red bell pepper, feta cheese, and a lemon-tahini dressing.

  3. Greek Salad with Tuna: Chopped cucumber, cherry tomatoes, red onion, Kalamata olives, feta cheese, canned tuna, and a Greek vinaigrette.

  4. Spinach and Egg Salad: Baby spinach leaves, hard-boiled eggs, avocado slices, cherry tomatoes, and a balsamic vinaigrette.

  5. Asian Edamame Salad: Cooked edamame beans, shredded carrots, sliced bell peppers, chopped scallions, sesame seeds, and a soy-ginger dressing.


These salads are easy to prepare in advance, and you can store them in portable containers for a quick and nutritious lunch on the go!
